The sober and contemporary style of the restaurant complements Stephane Nougier's modern cuisine, combining creativity but with respect for its surrounding.
"I utilise local products in a modern fashion. In creating recipes for fish and veg, I draw inspiration from Meridionale cuisine. I also work on creating a blend of herbs and spices to compliment my recipes whilst maintaining the balance of flavours. I pay particular attention to the presentation of my dishes, thus enhancing the beauty of our regional products. "
